This was such a great weekend! We had an epic Halloween-themed date night, hung out with all the people, and hit the trails not once but twice! We also managed to do some cleaning, talk finances, and meal prep for the week. Best team ever.

We Eat So Well
…and I want to talk about it.
After three or four days of consuming whatever the heck we fancied in Crested Butte—including an assortment of things we don’t usually eat, like ice cream and a bucket of fried chicken—it’s been nice to return to our whole foods-centric lifestyle.
One of my favorite things (there are many) about Nick is his passion for making delicious meals from whole, organic, and nutritious ingredients. He’s really made a believer out of me.

On the night before surgery and all through the house, I decided to get out of the house and tag along to dinner with my editor and her husband at Annette, a “scratch to table” restaurant out in the Stanley Marketplace.

I am here to present you with the most delicious, healthy, vegetarian meal I’ve had in a while. The kind where you feel like you’re scarfing down naughty late-night junk food, but in fact somehow you’ve fooled yourself and you’re getting loads of healthy things instead. (Okay, minus the cheese, but cheese is healthy for the soul, and we really didn’t use much at all.)

After my trip to LA, I’ve had an ongoing seafood craving. This past weekend, as part of our weekly meal prep, the man took my very specific cravings of the day (seafood, of course, but also sticky rice and veggies) and crafted this easy, luxurious, and remarkably simple Asian-inspired meal:

Mixed Mushroom & Spinach Lasagna
Thug Kitchen Knows Their $#*!
Last night the man and I put together Thug Kitchen‘s recipe for Mixed Mushroom and Spinach Lasagna. Okay, so Nick made the marinara from scratch (so good), as well as the pesto it called for, but I helped assemble as well as inhale the lasagna, so it all evens out.
The only thing we tweaked majorly was using real ricotta cheese instead of making Thug Kitchen’s tofu ricotta. I’d say that was a good call, my friends.

Denver Date Night
I can’t believe I met the man a year ago! We’ve had such a great time together these past 12 months, running, laughing, and savoring delicious food (and life) together. We decided to go back to Barolo Grill, where we celebrated 6 months back in August.
We had no idea that this visit would surpass our expectations in every way. Literally everything was outstanding.
