Yesterday was just one of those off days. A restaurant situation threw off my whole eating schedule, as well as my mental focus… at least for a little while. But I’m proud of myself for unhooking that mood and recalibrating. This recap will be short, as I’m super busy!
You guys. If you have a long commute or like to listening to podcasts while working out, you have GOT to listen to S*Town. The first 10 minutes will have you addicted. I promise. It’s from This American Life, the same people who brought you Serial (a podcast I also highly recommend). So good! It’s been making my morning get-ready routine far more interesting.
Also: yesterday I ran 6 miles in the middle of the workday so that I could have a couple margaritas at my work-wife Happy Hour. Priorities!

I thought I’d share a little sample of what my meals have looked like lately. This installment includes tons of veggies, fruits, grains, and fish!
The man is so good at packing lunches and planning meals, and I’m really loving the routine. It’s economical and sets you up for success (except for outlier-days like Burrito-gate).

After my trip to LA, I’ve had an ongoing seafood craving. This past weekend, as part of our weekly meal prep, the man took my very specific cravings of the day (seafood, of course, but also sticky rice and veggies) and crafted this easy, luxurious, and remarkably simple Asian-inspired meal:
Poached salmon on top of baby bok choy in a ginger/soy sauce over rice

…and that means this meal is perfectly timed! What better way to celebrate late summer than with a sweet & savory salad?
This recipe was inspired by The Floating Kitchen‘s Almond-Crusted Goat Cheese, Peach, & Fig Salad. We tweaked it a tad and enjoyed it immensely.
I’m headed into a busy season ahead: full-time work, ramping up my training and long runs for the Colfax Marathon next month, and, starting this week until July, 5 days of Grease rehearsal per week (2 of which are 5-hour choreography sessions).
I’m going to be working like a dog, moving constantly, and in need of delicious and nutritious fuel.
