After my trip to LA, I’ve had an ongoing seafood craving. This past weekend, as part of our weekly meal prep, the man took my very specific cravings of the day (seafood, of course, but also sticky rice and veggies) and crafted this easy, luxurious, and remarkably simple Asian-inspired meal:

Thug Kitchen Knows Their $#*!

Last night the man and I put together Thug Kitchen‘s recipe for Mixed Mushroom and Spinach Lasagna. Okay, so Nick made the marinara from scratch (so good), as well as the pesto it called for, but I helped assemble as well as inhale the lasagna, so it all evens out.

The only thing we tweaked majorly was using real ricotta cheese instead of making Thug Kitchen’s tofu ricotta. I’d say that was a good call, my friends.

Dairy Free & Daring

The man and I eat mostly vegetarian meals, I’d say about 95% of the time. A few years ago, I tried a day of eating vegan and it turned into a six-month stint. In that time, I discovered that eating vegan can be just as delicious as a diet full of meat and dairy.

I wish I’d known about this recipe, though, since mac and cheese is one of my all-time favorite comfort foods!

Looking to Maintain

After some weird weeks and a significant decrease in my running mileage, I was worried I might gain weight this month (maintaining a 30-pound weight loss is still relatively new territory for me). I also have been careful not to restrict myself too much, as I’ve been reading about Reverse Dieting and making sure my metabolism is running strong.

Anyway, this Daily Diet reflects a typical workday of eating real foods and enjoying every bite. Also: I have maintained this month and hope to get back to running lots of miles consistently soon.

An 8-Mile Run + Deliciousness

This Sunday, the man and I got up early to run an 8-mile long run along the Highline Canal in Englewood, through the beautiful Cherry Hills Village community.

After the strong run in chilly weather, we drove home and partook in a glorious brunch, created of course by Nick, the culinary genius. Check it out!

This weekend was chock-full of celebration! The man turns 33 today, but Monday birthdays are no fun. So instead, we dedicated the entire weekend to having as much fun + relaxation as possible.

My favorite part was the surprise visit to a Penrose, Colorado goat farm for a four-hour cheese-making class. Yum!
