Thursday was the Colorado Homes & Lifestyles Vision Day 2017.

We all went out to our Editor in Chief Kate’s new house in Louisville, which is out-of-this-world gorgeous. I am in love with it. Total house goals.
The kitchen is my favorite. Oh to have all that counter space! Mark my words: One day we’ll have a kitchen like this!
Because the weather was perfect, we set up shop on the deck to talk goals and magazine management.
Some clouds rolled in, but we still had views of Boulder’s flat irons. Also, Kate’s husband built those raised garden beds (another serious goal of ours). The backyard was huge! I kept thinking that I should’ve brought Harper! She would’ve had a ball running around that yard.

Wearing yoga pants to work because tired.

Friday nights are hard for me. I’m usually wiped out from the week. I thought I’d want to go for a run, but I had less than zero energy. I was dead.
This Week’s Noms
Remember this kale salad with garlic shrimp that I shared last week? Well we’ve been on a seafood kick… and an all-around eat-like-royalty streak. Take a look:
A seriously savory pasta + sautéed spinach (I have an irrational love for a giant glob of spinach).
Tender swordfish on a bed of arugula. I’d never had swordfish before, but it’s become one of my favorites. It’s so meaty, almost like chicken, but so much better!
Not much beats a good tuna steak, though. And that yogurt sauce is THE BOMB (it’s plain Greek yogurt, minced garlic, and some lemon zest).
A Longer-than-Planned Run
This past Saturday morning, while Nick embarked on a 20-mile long run in the mountains, I set out to do 8 miles and ended up pushing myself to 10. It felt so good!
After my shower, I had a giant second breakfast and then took a short nap with Harper on the couch (since she got us up that morning at 4:45).
A Backyard Feast!
Our friends Roland and Liz invited us over Saturday evening, and we cooked and ate ALL THE THINGS.
Liz and I made the side dishes while the guys grilled on the patio.
We dined outside in the backyard at twilight with strung lights and perfect weather. It was divine and I want to do it every Saturday night.
Caprese salad.
Grilled chicken.
Grilled mushrooms, stuffed with sun-dried tomatoes and prosciutto, topped with cheese. These were SO GOOD. (Shoo, fly!)
This Brussels sprouts salad was also scrumptious.
On my plate: Caprese salad, Brussels sprouts salad, pesto pasta, a stuffed mushroom, and some grilled sausage. We followed it all with s’mores around the fire pit. Good thing we had our long runs!

Yesterday I was pulling some pictures of our weekend from Nick’s phone, and I found this gem! It’s from the first week of July. Look how small Harps was!
And look how big she is now! Haha! Crazy pup.
Non-Lazy Sunday
On Sunday we cleaned the entire house, did multiple loads of laundry, took the pup to Roland and Liz’s yard for some exercise, did groceries, ran a 3-mile recovery run, and made this delicious dinner:
The photo doesn’t do it justice, but it’s a chopped kale salad with Annie’s Goddess dressing, and swordfish with some zucchini and a delicious sauce that Nick made. I am in love with swordfish!
Phew. Maybe I won’t skip a whole week’s worth of blog posts again anytime soon… except I’ll be in Seattle this week! Next week’s post should be similar to this one. 😉

Oh my, that kitchen is a goal of mine too! It looks beautiful. I can only imagine that the rest of the house is just as pretty. I have the same black tshirt dress from Target. I love those dresses so much, I basically buy them each season in a few colors haha. Have a great day 🙂
