I just finished The Ultra Mindset, An Endurance Champion’s 8 Core Principles for Success in Business, Sports, and Life, and while some of it felt lackluster—or far-reaching, as he tries to educate both on the mindset of an extreme endurance athlete and that of any other endeavor in life—there were three sections that really hit home for me in my running.
While I’m not training for any ultra distances (yet?), I can already see how these ideas have trickled into my training and helped strengthen my mental stamina.
With the chilly, rainy weather in Denver this week, running has made for some much-needed post-workout bubble bath time.
Sometimes I’m convinced that I run just so that I can 1.) earn that extra slice of pizza and 2.) indulge in some serious pampering time. These are a few of my favorite things (on the cheap)!
This week marks my two-year work anniversary as the digital editor of Colorado Homes & Lifestyles nand Mountain Living magazines! Even before I went to the Denver Publishing Institute, I fantasized about working with this company. Three years after that, I finally made the team.
The time has flown, and working with this group of people has made a great job even more outstanding. Sometimes I get burnt out or I think I need a change, but then I cannot imagine a better job or work environment—unless it involves getting paid a decent salary to eat pizzza on the beach. I’ll still hold out for that one.
Anyway, I wanted to celebrate my sharing glimpses of my office with you!
And so much fun.
This weekend was an outstanding one—other than a long run on the schedule and Nick’s flight to Philly on Sunday, we had nothing else planned and let everything unfold naturally.
The result was: seeing a great movie, starting a new tradition called Vacation Day, “beer school,” and so much meal prep and productivity on Sunday that my head might’ve fallen off (in a good way, I think).

I’ve become very financially focused these days, and spending moolah on new clothes is not quite on the to-do list. Instead, I’m working really hard to put outfits together that don’t look like the same old thing every week (although I’m aware that sometimes they do).
Take a gander! I think I did a pretty good job this time around.
I think ever since I fainted while running back in July 2016, I’ve had a love/hate relationship with my running pace, fueling strategy, and overall training mentality. It’s been a little difficult comparing myself to where I once had been while also having a lingering fear of feeling weak or pushing myself too far. It’s been annoying, to say the least!
Well this week I feel like I’ve finally let some of that go, and oddly enough, I’m seeing improvement in my running again. Go figure.

I thought I’d share a little sample of what my meals have looked like lately. This installment includes tons of veggies, fruits, grains, and fish!
The man is so good at packing lunches and planning meals, and I’m really loving the routine. It’s economical and sets you up for success (except for outlier-days like Burrito-gate).

After my trip to LA, I’ve had an ongoing seafood craving. This past weekend, as part of our weekly meal prep, the man took my very specific cravings of the day (seafood, of course, but also sticky rice and veggies) and crafted this easy, luxurious, and remarkably simple Asian-inspired meal:
Poached salmon on top of baby bok choy in a ginger/soy sauce over rice

Happy Monday! How was your weekend? We switched things up a bit and did our long runs on Saturday this time around. I’m kind of a fan of the change.
The man had a more intense run on his training schedule—14+ miles of trail at White Ranch Open Space—and I did a solo long run of 9 miles at Wash Park and the surrounding neighborhoods.
I took this opportunity to document everything that happens in the hours prepping for a long run, scenes along the way, and how I decompress/celebrate afterward. Enjoy!
