A Post-Rehearsal Salmon Dinner

A Simple Salmon Dinner! | THE REAL LIFE | food, fitness, health, eating, recipes

I. LOVE. FOOD.

That should’ve been the name of my blog. Oh well.

This Saturday I had an early-morning haircut and color before a four-hour Grease rehearsal. When I got home, the man and I put together this delicious dinner that looks far too involved. (Hint: It was anything but.)

Bonus: You get to meet our two new plants!

The salmon was sprinkled with olive oil, dill, lemon juice, and black pepper before baking it in tin foil, at 350 degrees for about 10-ish minutes (I just check on it occasionally).

The sides were also absolutely delicious! We had blackened leeks, asparagus, and a tomato/onion salad with the man’s dressing. Yum!

Speaking of tomatoes, you can see our new tomato plant in the background, straining to live. His name is Mateo the Tomato, and while he’s finicky about what he needs, he’s a survivor. (Yes, I’m weird and name my plants.)

Hazel the Basil plant

And here’s Hazel the Basil! She’s alive solely because of the man’s know-how. I always somehow end up killing my basil plants, despite my best efforts.

We topped the tomato salad with fresh basil, which is my favorite herb of all time.

HAVE ANY HERB/TOMATO GARDENING TIPS?
