A RIVER RUN & DINNER

Picking up where we left off in My Stay in Jackson Hole: Part 1, after smoothies & sunbathing, we geared up for an afternoon run before dinner.

It ended up being my fastest 5-miler ever, according to RunKeeper! Naturally, we celebrated with some good eats.

SNAKE RIVER DIKE

Not a bad view, right? This was the scenery of our 5-mile afternoon run at Emily’s Pond Levee (at Snake River Dike) in Jackson Hole. It was about 60 degrees, breezy, and downright beautiful.

Sarah was a lacrosse player for 10 years and runs crazy-fast miles, and I asked her to push me on our run, after a long day of traveling. I ended up running my fastest 4-6 mile run ever. Thanks, Sarah!

THE LOCAL

After showering (and drying my hair with the world’s slowest blowdryer…), we headed to The Local Restaurant & Bar for a casual night out.

We sat at the bar and started with some bread, herb butter, and rosé.

Next came, the ever-delicious Crispy Brussels Spouts with Bacon Vinaigrette. This dish was divine!

Wild Mushroom and Spinach Lasagna, The Local Restaurant & Bar, Jackson Hole, Wyoming

Next, came the Wild Mushroom and Spinach Lasagna… which was not what I expected. It was baked in a cast-iron bowl, but tasted far too saucy, rich, and hearty. I thought it was going to be on the lighter side.

What pleasantly surprised me was the Seared Buffalo Medallions! Coffee-rubbed tenderloin over a bed of truffled mashed potatoes and huckleberry demi-glace. Hot damn, it was delicious. I haven’t been eating much meat, but I figured Jackson Hole is the place to do it. Good choice!
