Smart Snacking: A Timeline of Eating Right, All Day Long

Snacking done right for runners or just a long hard day at work; healthy eating, fitness, metabolism, weight loss and maintenance

EAT ALL THE THINGS ALL DAY

I’m headed into a busy season ahead: full-time work, ramping up my training and long runs for the Colfax Marathon next month, and, starting this week until July, 5 days of Grease rehearsal per week (2 of which are 5-hour choreography sessions).

I’m going to be working like a dog, moving constantly, and in need of delicious and nutritious fuel.

Here’s a day’s timeline of how I’m kicking my meals + snack-attack plan  into high gear.

A Breakfast-for-Dinner to Die For

A delicious breakfast recipe: sautéed veggie medley, fried eggs, avocado, and banana

END THE DAY RIGHT

I think I mentioned before that I love breakfast. I love it so much that I could eat it all day long.

I recently went for a quick 3-mile run between a long work day and going to see Sweeney Todd at the Denver Center—and to avoid the expense (and often lack of nutrition) of quickly eating out, I improvised in the kitchen with this deliciousness.

Grease-Themed Dinner in Honor of Playing Rizzo

Grease-themed dinner recipe: Falafel Burgers with Baked Sweet Potato Fries

GREASE IS THE WORD

I recently was cast as Betty Rizzo in Grease—a dream role for me. In honor of my first rehearsal on Sunday, I planned a Grease- (and Greece-) themed dinner for Saturday night (after my 10-mile long run and zucchini bread snack).

What’s a Grease-themed dinner? Diner food… Burgers!

I chose Falafel “Burgers” & Baked Sweet-Potato Fries. Ironically, it was light on the grease—but heavy on the taste buds. Take a look these finger-lickin’ recipes we combined.

James Beard’s Zucchini Bread

James Beard's Zucchini Bread Recipe

A SNACK TO FANTASIZE ABOUT

This past Saturday, I had my 10-mile long run scheduled… except, after a beautiful 70-degree week, Denver got hit with a ton of wet snow. Boo.

Instead of running laps in beautiful Wash Park, I was stuck in the gym. On the treadmill. Running 10 miles. The. worst.

I decided that I needed something warm and delicious to motivate me to finish strong. A zucchini bread recipe was the obvious choice. Check out James Beard’s recipe below!

Stop What You’re Doing and Go See Sweeney Todd at the Denver Center

Sweeney Todd with DeVotchKa at Denver Center's Stage Theater: Go see it before May 15th!

THE DEMON BARBER OF FLEET STREET

I haven’t seen a show this good since Wicked at New York’s Gershwin Theater. I don’t care if you “don’t like musicals;” you will love this production of Sweeney Todd. (No one is paying me to say this.)

Everything was brilliant: the actors, the vocals, the set, the costumes—not to mention that the music is played by Grammy-nominated DeVotchKa, a four-piece multi-instrumental and vocal ensemble, originally from Denver.

Where can you get $15 workout outfits like these?

Where to get cheap workout clothes that are actually durable, comfortable, breathable, and cute!

A SPORTS BRA CRISIS

I recently had a come-to-Jesus moment when I realized the 3 sports bras I own were hand-me-downs from 15 years ago. Don’t judge! There were holes and sweat stains and… yeah, so that’s too much honesty.

I was on a mission to upgrade on a budget. You might be surprised where I found these super-inexpensive-yet-still-stylish workout clothes.

OOTD: Baseball Chic for the Colorado Rockies

Outfit of the day, an outfit for the baseball stadium! Coors Field in Denver, Colorado Rockies, baseball outfit

TAKE ME OUT TO THE BALL GAME

(Why do I look cross-eyed in this picture? You’re welcome.)

I’m leaving work early this afternoon with two coworkers and heading to Coors Field with free Colorado Rockies tickets—Happy Thursday to me!

Since I don’t own any Rockies gear, here’s what I went with for the ball game.

Caramelized Onion & Fig Pizza: So Much Yum!

RUNNER'S WORLD COOKBOOK: Caramelized onion and fig pizza recipe; food for fuel, running food, pre-run and post-run feasts

SLIGHTLY PIZZA-CRAZED

A mere 48 hours after my last homemade pizza success—which served as the perfect long run fuel!—I bring you another delicious pie recipe, this time from The Runner’s World Cookbook.

While it was made with the other half of Bobby Flay’s pizza dough from Saturday night’s mushroom/arugula/basil pie, this pizza tasted completely different—yet just as delicious.

Here’s the incredibly simple recipe!
